Cheese Waffy with a spicy mexican dip

Ingredients

1 packet Dukes cheese waffy Ingredients for the dip:

• 1 ½ cup kidney beans boiled
• ½ cup tomato finely chopped
• ½ cup onion finely chopped
• ½ cup capsicum finely chopped
• ¼  cup coriander finely chopped
• 1 tsp lemon juice
• 2 tsp jalapeno chilli finely chopped
• 2 tsp olives finely chopped
• 2 tbsp tomato ketchup
• 2 tbsp red chilli sauce
• 1 tsp red chilli powder
• 1 tsp pepper
• 1 tsp oregano
• Salt to  taste

To garish:

• Fresh coriander
• Red bell pepper julienned

Preparation time

40 minutes

Method

1. Roughly mash the kidney beans.
2. Mix everything together.
3. Adjust with ¼ cups water if the mixture is too stiff.
4. Serve with cheese waffy. Enjoy!
